One pot soup:
ā«ļøPeel and cube 1 Butternut Squash
ā«ļøSautee in olive oil for 3 min:
1 chopped onion
1 chopped red pepper
3 cloves minced garlic
ā«ļø Add and sautee for 10 min:
Butternut squash
1/2 Tsp Thyme
1/4 Tsp Cayenne pepper
Salt/Peper
ā«ļø Add and cook for 20 min:
1 1/2 C Cooked Black beans
1 can of Coconut milk
3 C Vegetable Stock
ā«ļø Add 1 C Chopped Kale
