One pot soup:

ā–«ļøPeel and cube 1 Butternut Squash

ā–«ļøSautee in olive oil for 3 min:

1 chopped onion

1 chopped red pepper

3 cloves minced garlic

ā–«ļø Add and sautee for 10 min:

Butternut squash

1/2 Tsp Thyme

1/4 Tsp Cayenne pepper

Salt/Peper

ā–«ļø Add and cook for 20 min:

1 1/2 C Cooked Black beans

1 can of Coconut milk

3 C Vegetable Stock

ā–«ļø Add 1 C Chopped Kale


Enjoy it as soup or over rice!!!šŸ²
